Last night's menu

For those of us who alternate among grills/smokers other than their kamados, here's an opportunity to tell us about the meal you cooked last night.
Guess I better start. I needed a two-zone fire so I went to the Performer to steam/cook artichokes indirectly and a salmon filet – cut in two – directly.
Neither my wife nor I were sure about the salmon/artichoke combination, but it turned out well.
Here we are shortly after I added the salmon opened the foil on the 'chokes to let in some applewood smoke.

We had a party on deserted island for our group, 200+ showed up so it was cook,cook,cook dogs burgers & sausage all on 2 weber kettles. Along with a live band and frosty adult beverages a good time was had by all, even when the Coast Guard stopped by to in sure we were behaving.

How did the artichokes do on the grill? Nevr thought of cooking them outside. What was your time and temp?!
Id like to try them on my CGK!!

How did the artichokes do on the grill? Nevr thought of cooking them outside. What was your time and temp?!
Id like to try them on my CGK!!

For my wife and me, artichokes on the grill have much more flavor than the boiled version.
I season with EVOO and garlic, making sure the base of the artichoke is resting in a bit of oil. I also drizzle oil over the trimmed 'choke top before sealing in foil with just a tiny opening to vent steam.
On the Performer, I cooked them indirect for about 45 minutes, with the lid thermometer reading ~ 400 degrees. I rotated them after 15 minutes and opened the foil after 30 minutes. That gave them a hit of the smoke I was using on the salmon. Of course, YMMV.

It was halibut night again with a different recipe:

I've about decided that halibut is to fish what filets are to steaks. Both need to be properly seasoned to become a great meal.

Looks good. YOu just lay the herbs on the top for the cook? I'm drooling!

First crack at doing pizzas on the CGK. They were awesome!! We did a pepperoni, half shroom and some cheddar and herbs on one. The other was a mozzarella, tomato, basil on the other. The basil, tom, moz was my favorite.

Did these with a memphis style rub and sauce that I made up after researching this site and around the web. They were good. Falling off the bone for sure.

Last night was bone-in pork chops after an overnight soak in soy sauce, olive oil, lemon pepper and water.
With the grill super hot, they were pretty much over the coals, flip and move to the side for some indirect heat.
Turned out yummy.

All of that looks very good. Makes me want to cook something. I cooked fajitas last night but no pics. Today for the game I think it'll be wings!
